Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • ½ cup vegan butter
  • ¼ cup cold water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour and vegan butter until crumbly. Add cold water and mix until dough forms. Roll out dough and line a pie dish.
  3. In a pan, heat olive oil. Sauté onion and garlic until fragrant. Add carrots, peas, and potatoes. Cook until tender.
  4. Add vegetable broth, salt, and pepper. Simmer until thickened.
  5. Pour vegetable mixture into pie crust. Cover with remaining dough. Cut slits on top.
  6. Bake for 40 minutes or until golden brown.
