Mediterranean Air Fryer Veggie Medley

Vegetable Medley
- 1 cup Zucchini, chopped
- 1 cup Bell Peppers, chopped
- 1 cup Red Onion, chopped
- 1 tablespoon Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
1. Preheat your air fryer to 375°F (190°C).
2. In a large bowl, combine the chopped zucchini, bell peppers, and red onion.
3. Drizzle the olive oil over the vegetables and sprinkle with dried oregano, garlic powder, salt, and black pepper. Toss to coat evenly.
4. Place the vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
5. Cook for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
6. Serve immediately and enjoy!
