Ingredients 

Main Ingredients

  • 2 cups cooked chickpeas
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup diced red onion
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 large whole wheat tortillas

Instructions 

  1. In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, parsley, and mint.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Lay out the tortillas and divide the chickpea mixture evenly among them.
  5. Roll up the tortillas and serve immediately.
