Mediterranean Chickpea and Spinach Stew

Main Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can chickpeas, drained and rinsed 15 oz
- 1 can diced tomatoes 14.5 oz
- 4 cups fresh spinach
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups vegetable broth
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
Add chickpeas, diced tomatoes, spinach, cumin, smoked paprika, salt, and pepper. Stir well.
Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes.
Adjust seasoning if needed. Serve hot.
