Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Add bell peppers and zucchini, cook until tender.
Stir in chickpeas, diced tomatoes, vegetable broth, cumin, and smoked paprika.
Season with salt and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Garnish with fresh parsley before serving.
