Ingredients 

Main Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 cucumber diced
  • 1 tomato diced
  • ¼ red onion finely chopped
  • ¼ cup Kalamata olives pitted and sliced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • ½ cup hummus

Instructions 

  1. In a bowl, combine chickpeas, cucumber, tomato, red onion, and olives.
  2. Drizzle with olive oil and lemon juice. Sprinkle oregano, salt, and pepper. Toss to combine.
  3. Spread hummus on each tortilla.
  4. Add the chickpea mixture to each tortilla.
  5. Roll up the tortillas and serve.
