Ingredients 

Main Ingredients

  • 1 cup Orzo
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • ¼ cup Red Onion, finely chopped
  • ¼ cup Kalamata Olives, pitted and sliced
  • 2 tablespoon Fresh Parsley, chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and rinse with cold water.
  2. 2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and olives.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Garnish with fresh parsley before serving.
