Mediterranean Roast Vegetables Recipe

- 1 large zucchini sliced
- 1 large red bell pepper sliced
- 1 large yellow bell pepper sliced
- 1 medium red onion sliced
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine all the sliced vegetables.
Drizzle the olive oil over the vegetables and sprinkle with oregano, basil, salt, and black pepper. Toss to coat evenly.
Spread the vegetables in a single layer on a baking sheet.
Roast in the preheated oven for 30 minutes, or until the vegetables are tender and slightly browned.
