Main Ingredients
- 2 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ¼ cup red onion, thinly sliced
- ¼ cup kalamata olives, pitted and halved
- ¼ cup vegan feta cheese, crumbled
- 2 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- to taste salt and pepper
In a large mixing bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, kalamata olives, and vegan feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately and enjoy!
