Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup kalamata olives, pitted and halved
  • ¼ cup vegan feta cheese, crumbled
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. In a large mixing bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, kalamata olives, and vegan feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately and enjoy!
