Ingredients 

Main Ingredients

  • 200 g pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 can diced tomatoes 400g
  • ¼ cup chopped fresh parsley

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and onion, sauté until translucent.
  3. Add bell peppers and zucchini, cook until tender.
  4. Stir in diced tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  5. Add cooked pasta to the pan, mix well.
  6. Garnish with fresh parsley before serving.
