Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Add eggplant, zucchinis, and bell peppers. Cook until vegetables begin to soften.
Stir in diced tomatoes, vegetable broth, oregano, and basil.
Season with salt and pepper.
Bring to a boil, then reduce heat and simmer for 20-25 minutes.
Garnish with fresh parsley before serving.
