Ingredients

  • 2 cups cherry tomatoes halved
  • 1 large zucchini sliced
  • 1 large red bell pepper sliced
  • 1 medium red onion sliced
  • 3 tablespoon olive oil
  • 2 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cherry tomatoes, zucchini, red bell pepper, and red onion.
  3. Drizzle the vegetables with olive oil and sprinkle with dried oregano, salt, and black pepper. Toss to coat evenly.
  4. Spread the vegetables out on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned.
  6. Remove from the oven and serve warm.
