Ingredients

  • 2 cups Cherry Tomatoes halved
  • 1 cup Zucchini sliced
  • 1 cup Bell Peppers chopped
  • 1 cup Red Onion sliced
  • 3 tablespoons Olive Oil
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cherry tomatoes, zucchini, bell peppers, and red onion.
  3. Drizzle the olive oil over the vegetables and sprinkle with dried oregano, salt, and black pepper. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 45 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and serve warm.
