Ingredients 

Main Ingredients

  • 4 Whole wheat tortillas
  • 1 cup Hummus
  • 1 cup Cucumber, diced
  • 1 cup Tomato, diced
  • ½ cup Red onion, thinly sliced
  • ¼ cup Kalamata olives, sliced
  • ¼ cup Fresh parsley, chopped
  • 1 tablespoon Lemon juice
  • 1 teaspoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Spread a generous amount of hummus on each tortilla.
  2. 2. In a mixing bowl, combine cucumber, tomato, red onion, olives, parsley, lemon juice, and olive oil. Season with salt and pepper.
  3. 3. Divide the veggie mixture evenly among the tortillas, placing it on top of the hummus.
  4. 4. Roll up the tortillas tightly and slice in half if desired. Serve immediately.
