Mediterranean Yellow Rice and Vegetables Recipe

Main Ingredients
- 1 cup Basmati rice rinsed
- 2 cups Vegetable broth
- 1 tablespoon Olive oil
- 1 teaspoon Turmeric
- 1 cup Chopped bell peppers mixed colors
- 1 cup Chopped zucchini
- 1 cup Chopped tomatoes
- 2 cloves Garlic minced
- 1 teaspoon Salt or to taste
- 1 teaspoon Black pepper or to taste
- 1 tablespoon Lemon juice freshly squeezed
- 2 tablespoon Chopped fresh parsley for garnish
1. Heat the olive oil in a pot over medium heat. Add the minced garlic and cook until fragrant.
2. Add the rinsed basmati rice and turmeric. Stir well to coat the rice with the oil and turmeric.
3. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
4. In a separate pan, heat a bit more olive oil over medium heat. Add the chopped bell peppers, zucchini, and tomatoes. Cook until the vegetables are tender.
5. Season the vegetables with salt and black pepper to taste.
6. Once the rice is done, fluff it with a fork and stir in the cooked vegetables.
7. Drizzle with fresh lemon juice and garnish with chopped parsley before serving.
