Ingredients 

Main Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1 cup frozen peas and carrots

Instructions 

  1. Heat the oil in a large skillet over medium heat.
  2. Add the rice and cook, stirring frequently, until golden brown.
  3. Add the onion and garlic, and cook until the onion is translucent.
  4. Stir in the tomato sauce, vegetable broth, and salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes.
  6. Stir in the frozen peas and carrots, cover, and cook for an additional 5 minutes.
  7. Fluff with a fork and serve.
