Ingredients 

Main Ingredients

  • 1 cup Black beans cooked
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Diced tomatoes fresh
  • 1 cup Diced bell peppers any color
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt to taste
  • 8 Taco shells corn or flour

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced bell peppers and cook until softened, about 5 minutes.
  3. 3. Stir in black beans, corn, tomatoes, chili powder, cumin, garlic powder, and salt. Cook for another 5 minutes.
  4. 4. Warm taco shells according to package instructions.
  5. 5. Fill taco shells with the veggie mixture and serve immediately.
