Ingredients

  • 1 cup Chickpeas cooked
  • 1 cup Quinoa cooked
  • 1 Cucumber diced
  • 1 Tomato diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 Lemon juiced

Instructions 

  1. 1. In a large pan, heat the olive oil over medium heat.
  2. 2. Add the cooked chickpeas and quinoa to the pan. Stir well.
  3. 3. Add the diced cucumber and tomato. Mix everything together.
  4. 4. Season with salt, ground cumin, and ground coriander. Stir to combine.
  5. 5. Drizzle with lemon juice and mix well. Serve warm or cold.
