Ingredients 

Main Ingredients

  • 8 pieces Mini tortillas
  • 1 cup Vegan cheese shredded
  • 1 cup Black beans cooked
  • 1 cup Corn cooked
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat a skillet over medium heat and add a bit of olive oil.
  2. 2. Place a mini tortilla in the skillet and sprinkle with vegan cheese, black beans, and corn.
  3. 3. Top with another mini tortilla and cook until golden brown, about 2-3 minutes per side.
  4. 4. Repeat with remaining tortillas and filling.
  5. 5. Serve warm and enjoy!
