Ingredients 

Main Ingredients

  • 8 small tortillas corn or flour
  • 1 cup black beans cooked or canned
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 avocado diced
  • 1 tablespoon lime juice fresh
  • 2 tablespoon cilantro chopped

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut tortillas into quarters and press each piece into a muffin tin cup to form a small bowl.
  3. Bake for 10 minutes or until edges are golden and crispy. Remove and let cool.
  4. In a bowl, mix black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
  5. Spoon the mixture into each tortilla cup.
  6. Top with diced avocado, lime juice, and cilantro.
