Ingredients 

Main Ingredients

  • 4 cups Vegetable Broth
  • 2 tablespoon Miso Paste
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Sesame Oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 200 grams Ramen Noodles
  • 1 cup Mushrooms, sliced
  • 1 cup Spinach
  • 1 cup Carrots, julienned
  • 1 cup Corn
  • 2 stalks Green Onions, chopped

Instructions 

  1. 1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 2 minutes.
  2. 2. Add vegetable broth, miso paste, and soy sauce. Stir until miso paste is dissolved.
  3. 3. Bring to a boil, then reduce heat to simmer. Add mushrooms, carrots, and corn. Simmer for 10 minutes.
  4. 4. Cook ramen noodles according to package instructions. Drain and set aside.
  5. 5. Add spinach to the broth and cook for 2 minutes until wilted.
  6. 6. Divide cooked noodles into bowls. Ladle broth and vegetables over noodles.
  7. 7. Garnish with chopped green onions. Serve hot.
