Ingredients 

Main Ingredients

  • 200 g firm tofu cubed
  • 2 tablespoon vegetable oil
  • 4 cups vegetable broth
  • 3 tablespoon miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced
  • 200 g ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions green onions sliced

Instructions 

  1. 1. Heat the vegetable oil in a large pot over medium heat. Add the tofu and cook until golden brown. Remove and set aside.
  2. 2. In the same pot, add the garlic and ginger. Cook for 1-2 minutes until fragrant.
  3. 3. Add the vegetable broth, miso paste, soy sauce, and mushrooms. Bring to a simmer and cook for 10 minutes.
  4. 4. Add the ramen noodles and cook according to package instructions.
  5. 5. Stir in the baby spinach and cooked tofu. Cook for another 2 minutes until spinach is wilted.
  6. 6. Serve hot, garnished with sliced green onions.
