Miso Vegetable Soup Recipe
A simple and delicious vegan miso vegetable soup.

Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 cups Carrots, sliced
- 2 cups Zucchini, sliced
- 4 cups Vegetable broth
- 3 tablespoon Miso paste
- 1 cup Spinach
Heat olive oil in a pot over medium heat.
Add diced onion and minced garlic. Sauté until fragrant.
Add sliced carrots and zucchini. Cook for about 5 minutes.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Stir in miso paste until fully dissolved.
Add spinach and cook until wilted. Serve hot.
