Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Carrots, sliced
  • 2 cups Zucchini, sliced
  • 4 cups Vegetable broth
  • 3 tablespoon Miso paste
  • 1 cup Spinach

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic. Sauté until fragrant.
  3. Add sliced carrots and zucchini. Cook for about 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Stir in miso paste until fully dissolved.
  6. Add spinach and cook until wilted. Serve hot.
