A delicious vegan version of the traditional Puerto Rican dish, Mofongo.

Main Ingredients
- 4 green plantains peeled and cut into 1-inch slices
- 3 cloves garlic minced
- 1 cup vegetable broth
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Heat the olive oil in a frying pan over medium heat.
Add the plantain slices and fry until golden brown, about 5-7 minutes per side.
Remove the plantains and place them in a mortar. Add the minced garlic, salt, and pepper.
Mash the mixture until well combined, adding vegetable broth as needed to achieve the desired consistency.
Shape the mixture into small balls or mounds and serve warm.
