Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 can diced tomatoes
  • 2 cans chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another 1-2 minutes.
  4. Stir in ground cumin, coriander, cinnamon, and paprika. Cook for 1 minute.
  5. Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Season with salt and black pepper. Stir in chopped cilantro before serving.
