Moroccan Chickpea Tagine
A hearty and flavorful vegan Moroccan chickpea tagine.

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 can diced tomatoes (400g)
- 1 can chickpeas drained and rinsed (400g)
- 2 cups vegetable broth (500ml)
- 1 carrot, sliced
- 1 zucchini, sliced
- ½ cup dried apricots, chopped (75g)
- ¼ cup fresh cilantro, chopped (10g)
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
Add cumin, cinnamon, turmeric, ginger, paprika, salt, and pepper. Cook for another minute.
Add diced tomatoes, chickpeas, vegetable broth, carrot, zucchini, and dried apricots. Bring to a boil, then reduce heat and simmer for 30 minutes.
Stir in fresh cilantro before serving.
