Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 1 large carrot, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 can chickpeas, drained and rinsed 400g
  • 1 can diced tomatoes 400g
  • 1 cup vegetable broth
  • 0.5 cup dried apricots, chopped
  • 0.25 cup raisins
  • 0.25 cup fresh cilantro, chopped
  • 0.25 cup fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Stir in cumin, cinnamon, turmeric, ginger, black pepper, and salt. Cook for 1 minute.
  3. Add carrot, zucchini, and red bell pepper. Cook for 5 minutes.
  4. Stir in chickpeas, diced tomatoes, vegetable broth, apricots, and raisins. Bring to a boil.
  5. Reduce heat, cover, and simmer for 30 minutes.
  6. Stir in cilantro and parsley before serving.
