Ingredients 

Main Ingredients

  • 2 large Eggplants sliced
  • 2 cups Lentils cooked
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Tomato sauce
  • 1 teaspoon Cinnamon
  • 1 teaspoon Oregano
  • to taste Salt and pepper

Bechamel Sauce

  • 2 cups Almond milk
  • ¼ cup Olive oil
  • ¼ cup Flour
  • ¼ teaspoon Nutmeg
  • to taste Salt

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let sit for 30 minutes, then rinse and pat dry.
  3. In a frying pan, sauté the chopped onion and minced garlic until translucent.
  4. Add the cooked lentils, tomato sauce, cinnamon, oregano, salt, and pepper. Simmer for 15 minutes.
  5. In another pan, heat olive oil and add flour to make a roux. Gradually add almond milk, stirring constantly until thickened. Add nutmeg and salt to taste.
  6. Layer the eggplant slices and lentil mixture in a baking dish. Pour the bechamel sauce on top.
  7. Bake for 45 minutes or until golden brown on top.
