Ingredients 

Main Ingredients

  • 1 cup barley
  • 1 lb mushrooms, sliced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cups water
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions 

  1. Rinse barley under cold water.
  2. In a large pot, sauté onions, carrots, and celery until softened.
  3. Add mushrooms and garlic, cook until mushrooms are tender.
  4. Stir in barley, vegetable broth, water, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Season with salt and pepper to taste.
