Mushroom Barley Soup Recipe

Main Ingredients
- 1 cup barley
- 1 lb mushrooms, sliced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cups water
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Rinse barley under cold water.
In a large pot, sauté onions, carrots, and celery until softened.
Add mushrooms and garlic, cook until mushrooms are tender.
Stir in barley, vegetable broth, water, and thyme.
Bring to a boil, then reduce heat and simmer for 45 minutes.
Season with salt and pepper to taste.
