Ingredients 

Main Ingredients

  • 1 cup pearl barley
  • 2 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups sliced mushrooms
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the diced onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and cook for another minute.
  4. 4. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.
  5. 5. Pour in the vegetable broth, diced tomatoes, pearl barley, dried thyme, and dried rosemary. Stir to combine.
  6. 6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 45 minutes, or until the barley is tender.
  7. 7. Season with salt and pepper to taste before serving.
