Ingredients 

Main Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. Add sliced mushrooms and cook until they release their juices and become tender.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Stir in coconut milk and season with salt and pepper. Simmer for another 5 minutes.
  6. Use an immersion blender to blend the soup until smooth.
  7. Serve hot, garnished with fresh parsley if desired.
