Ingredients

  • 1 cup Chickpea Flour
  • 1 cup Water
  • 1 cup Mushrooms sliced
  • 2 cups Spinach chopped
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, whisk together chickpea flour and water until smooth.
  3. Heat olive oil in a skillet over medium heat. Add mushrooms and cook until soft.
  4. Add spinach to the skillet and cook until wilted.
  5. Pour the chickpea flour mixture into the skillet. Stir to combine with the vegetables.
  6. Season with salt and black pepper.
  7. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the frittata is set.
  8. Remove from oven and let cool slightly before serving.
