Ingredients 

Main Ingredients

  • 20 pieces Jumbo pasta shells
  • 2 cups Fresh spinach chopped
  • 2 cups Mushrooms chopped
  • 1 cup Vegan ricotta cheese
  • 2 cups Marinara sauce
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions. Drain and set aside.
  3. In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  4. Add mushrooms and spinach to the saucepan. Cook until the mushrooms are tender and the spinach is wilted. Season with salt and pepper.
  5. In a mixing bowl, combine the mushroom-spinach mixture with vegan ricotta cheese.
  6. Stuff each pasta shell with the mixture and place them in a baking dish.
  7. Pour marinara sauce over the stuffed shells.
  8. Bake in the preheated oven for 20-25 minutes, until heated through and bubbly.
  9. Serve hot and enjoy!
