Ingredients 

Main Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons flour
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large pan over medium heat. Add the chopped onion and cook until soft.
  2. Add minced garlic and sliced mushrooms. Cook until mushrooms are tender.
  3. Stir in paprika and thyme. Cook for another minute.
  4. Add vegetable broth, coconut milk, and soy sauce. Bring to a simmer.
  5. In a small bowl, mix flour with a bit of water to make a slurry. Add to the pan and stir until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve over pasta or rice, garnished with fresh parsley.
