Ingredients

  • 1 cup Mushrooms sliced
  • 1 cup Vegan Swiss Cheese shredded
  • 1 cup Chickpea Flour
  • 1 cup Water
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until tender.
  3. In a bowl, mix chickpea flour, water, baking powder, and salt until smooth.
  4. Pour the chickpea mixture into the skillet with the mushrooms. Cook for a few minutes until the edges start to set.
  5. Sprinkle shredded vegan Swiss cheese on top and transfer the skillet to the oven.
  6. Bake for 15-20 minutes until the frittata is fully set and golden brown.
  7. Let it cool slightly before slicing and serving.
