Instructions
Preheat your oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until tender.
In a bowl, mix chickpea flour, water, baking powder, and salt until smooth.
Pour the chickpea mixture into the skillet with the mushrooms. Cook for a few minutes until the edges start to set.
Sprinkle shredded vegan Swiss cheese on top and transfer the skillet to the oven.
Bake for 15-20 minutes until the frittata is fully set and golden brown.
Let it cool slightly before slicing and serving.
