Salad Ingredients
- 1 medium Napa cabbage, shredded
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 0.25 cup green onions, chopped
- 0.25 cup cilantro, chopped
- 0.25 cup peanuts, chopped (optional)
Dressing Ingredients
- 0.25 cup rice vinegar
- 2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon grated ginger
- 1 clove garlic, minced
In a large bowl, combine Napa cabbage, carrots, red bell pepper, green onions, and cilantro.
In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, maple syrup, grated ginger, and minced garlic.
Pour the dressing over the salad and toss to combine.
Sprinkle chopped peanuts on top if using.
Serve immediately or refrigerate for later.
