Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion, diced
  • 2 cloves Garlic, minced
  • 3 cups Vegetable Broth
  • 2 cups Potatoes, diced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Corn kernels
  • 1 cup Coconut Milk
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Sauté until translucent.
  3. Add vegetable broth, potatoes, carrots, and celery. Bring to a boil.
  4. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  5. Stir in corn, coconut milk, thyme, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot and enjoy!
