Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 cup Onion, chopped
  • 1 cup Green bell pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 1 can Diced tomatoes
  • 4 cups Vegetable broth
  • 2 cups Okra, sliced
  • 1 cup Cooked rice
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Stir in the diced tomatoes, vegetable broth, okra, thyme, paprika, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Serve hot over cooked rice.
