New Orleans Creole Gumbo Recipe
A delicious vegan version of the classic New Orleans Creole Gumbo.

Main Ingredients
- 2 tablespoon Olive oil
- 1 cup Onion, chopped
- 1 cup Green bell pepper, chopped
- 1 cup Celery, chopped
- 3 cloves Garlic, minced
- 1 can Diced tomatoes
- 4 cups Vegetable broth
- 2 cups Okra, sliced
- 1 cup Cooked rice
- 1 teaspoon Thyme
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Heat the olive oil in a large pot over medium heat.
Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes.
Add the garlic and cook for another minute.
Stir in the diced tomatoes, vegetable broth, okra, thyme, paprika, salt, and black pepper. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Serve hot over cooked rice.
