Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 1 Red bell pepper, thinly sliced
  • 1 Carrot, julienned
  • 1 Cucumber, thinly sliced
  • 2 tablespoon Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Lime juice
  • 1 teaspoon Maple syrup
  • 1 clove Garlic, minced
  • 1 tablespoon Sesame seeds
  • 2 tablespoon Chopped cilantro

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked noodles, red bell pepper, carrot, and cucumber.
  3. 3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, lime juice, maple syrup, and minced garlic.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Garnish with sesame seeds and chopped cilantro before serving.
