Main Ingredients
- 200 g rice noodles
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 cup edamame, shelled
- ¼ cup soy sauce
- 2 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 2 green onions, chopped
- Sesame seeds for garnish
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, garlic, and ginger.
3. In a large bowl, combine cooked noodles, bell peppers, carrot, cucumber, and edamame.
4. Pour the sauce over the noodle mixture and toss to coat evenly.
5. Garnish with chopped green onions and sesame seeds before serving.
