- 1 cup Rolled Oats
- 1 cup All-Purpose Flour
- ½ cup Coconut Oil melted
- ½ cup Brown Sugar
- ¼ cup Maple Syrup
- 1 teaspoon Vanilla Extract
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- 1 cup Vegan Chocolate Chips
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, flour, baking soda, and salt.
In another bowl, mix the melted coconut oil, brown sugar, maple syrup, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the vegan chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
