One Pot Vegan Potato Lentil Curry

Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon cayenne pepper
  • 4 medium potatoes, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 can coconut milk (14 oz)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft.
  2. Add garlic and ginger, cook for another minute.
  3. Stir in curry powder, cumin, turmeric, cinnamon, coriander, and cayenne pepper. Cook for 1-2 minutes.
  4. Add potatoes, lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes, or until potatoes and lentils are tender.
  6. Stir in coconut milk, season with salt and pepper. Simmer for another 5 minutes.
  7. Garnish with fresh cilantro before serving.
