Instructions
Heat olive oil in a large pot over medium heat.
Add onions and garlic, sauté until translucent.
Add carrots, sweet potato, and butternut squash. Cook for 5 minutes.
Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 20 minutes, until vegetables are tender.
Blend the soup until smooth.
Stir in coconut milk and cumin. Season with salt and pepper.
Simmer for another 5 minutes before serving.
