Ingredients 

Main Ingredients

  • 2 pieces Carrots chopped
  • 1 piece Sweet Potato diced
  • 1 piece Butternut Squash peeled and cubed
  • 1 piece Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add carrots, sweet potato, and butternut squash. Cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes, until vegetables are tender.
  6. Blend the soup until smooth.
  7. Stir in coconut milk and cumin. Season with salt and pepper.
  8. Simmer for another 5 minutes before serving.
