Ingredients 

Main Ingredients

  • 1 cup orzo
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • ¼ cup vegan feta, crumbled
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions 

  1. Cook orzo according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until translucent.
  3. Add bell pepper and zucchini, cook until tender.
  4. Stir in cherry tomatoes and cooked orzo. Season with salt and pepper.
  5. Remove from heat, sprinkle with vegan feta and fresh basil.
