A vegan twist on the classic Japanese dish, Oyakodon.

Main Ingredients
- 1 cup Rice cooked
- 1 block Tofu firm, cubed
- 1 cup Vegetable Broth
- 2 tablespoon Soy Sauce
- 1 tablespoon Mirin
- 1 tablespoon Sugar
- 1 small Onion sliced
- 2 stalks Green Onions chopped
1. Cook the rice according to the package instructions.
2. In a pan, heat the vegetable broth, soy sauce, mirin, and sugar over medium heat.
3. Add the sliced onion and cook until soft.
4. Add the cubed tofu and simmer for about 5 minutes.
5. Serve the tofu mixture over the cooked rice and garnish with chopped green onions.
