Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions and minced garlic. Sauté until onions are translucent.
Add diced carrots and celery. Cook for another 5 minutes.
Pour in vegetable broth and coconut milk. Bring to a simmer.
Add chopped oyster mushrooms, salt, and black pepper. Simmer for 20 minutes.
Serve hot.
