Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 2 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 cup Oyster Mushrooms, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and minced garlic. Sauté until onions are translucent.
  3. Add diced carrots and celery. Cook for another 5 minutes.
  4. Pour in vegetable broth and coconut milk. Bring to a simmer.
  5. Add chopped oyster mushrooms, salt, and black pepper. Simmer for 20 minutes.
  6. Serve hot.
