Ingredients 

Main Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 lemon, sliced

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Cut parchment paper into large squares.
  3. Place vegetables in the center of each parchment square.
  4. Drizzle with olive oil and season with salt, pepper, oregano, and basil.
  5. Top with lemon slices.
  6. Fold the parchment paper to create a sealed packet.
  7. Bake for 20 minutes.
  8. Serve hot.
