Parsnip Apple Soup
A creamy, vegan soup made with parsnips and apples.

Main Ingredients
- 2 cups parsnips, peeled and chopped
- 2 cups apples, peeled and chopped
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt
- ½ teaspoon black pepper
1. In a large pot, sauté the onion and garlic until soft.
2. Add the parsnips and apples, and cook for a few minutes.
3. Pour in the vegetable broth, bring to a boil, then simmer until parsnips are tender.
4. Blend the soup until smooth, then return to the pot.
5. Stir in the coconut milk, salt, and pepper. Heat through and serve.
