Ingredients 

Main Ingredients

  • 2 cups parsnips, peeled and chopped
  • 2 cups apples, peeled and chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the parsnips and apples, and cook for a few minutes.
  3. 3. Pour in the vegetable broth, bring to a boil, then simmer until parsnips are tender.
  4. 4. Blend the soup until smooth, then return to the pot.
  5. 5. Stir in the coconut milk, salt, and pepper. Heat through and serve.
