Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes 15 oz
  • 1 can cannellini beans, drained and rinsed 15 oz
  • 4 cups vegetable broth
  • 1 cup ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until vegetables are tender.
  3. Stir in diced tomatoes, cannellini beans, vegetable broth, oregano, and basil. Bring to a boil.
  4. Add pasta and cook until al dente.
  5. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
