Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can cannellini beans, drained and rinsed (15 oz)
  • 4 cups vegetable broth
  • 1 cup ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 1 handful fresh parsley, chopped (optional)

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and cook for another minute.
  4. 4. Add the diced tomatoes, cannellini beans, vegetable broth, ditalini pasta, dried oregano, and dried basil. Stir well.
  5. 5. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the pasta is cooked.
  6. 6. Season with salt and pepper to taste.
  7. 7. Serve hot, garnished with fresh parsley if desired.
